Lummur (vegan)

Vegan Lummur


Lummur are small, thick pancakes that are often found in everyday Icelandic cuisine - but you can also find them, appropriately prepared and with interesting side dishes, in sophisticated gastronomy.

Here I have a solid version of vegan Lummur as "morgunverðarpönnukökur", i.e. as "breakfast pancakes". With that in mind, I wish you a nice, delicious Sunday breakfast!


Ingredients

150 g wholemeal flour
2 tsp baking soda
1 Tbsp oat flakes
2 Tbsp flax seeds
1/2 tsp salt
200 ml almond milk

oil for frying

Maple syrup, fresh fruit and, if desired, nuts for serving


Preparation

In a bowl, mix the flour with the baking powder, the oat flakes, the linseed and the salt.


Add the almond milk in portions and stir in.



Heat the oil in a pan and fry the dough in portions in the hot fat until the outside of the Lummur has become nice and golden brown.


Then serve the Lummur directly with maple syrup, fresh fruit and, if you like, chopped nuts.
