Silvíukaka

Silvia cake


This cake originally comes from Sweden and owes its name to the Swedish Queen Silvia - and since the cake is extremely delicious, you can of course also find it in Iceland.

The cake owes its delicious taste in large part to the "púðursykur", which is not - as the name might suggest - a powdered sugar, but simply sticky brown sugar.


Ingredients

4 eggs
380 g brown sugar
400 g flour
4 tsp baking powder
1 pinch of ground vanilla
200 ml water

100 g butter
150 g powdered sugar
1 egg yolk
1 pinch of ground vanilla

2 - 3 Tbsp coconut flakes


Preparation

Preheat the oven to 350 °F (180 °C) upper/lower heat.

In a large bowl, beat the eggs with the sugar until fluffy.



Add the flour and baking powder and stir.


Finally add the water and stir in.


Then pour the dough into a baking pan (approx. 35 x 25 cm) lined with baking paper and smooth it out.


Then bake the cake in the middle shelf at 350 °F (180 °C) upper and lower heat for approx. 30 to 40 minutes until the cake has turned golden yellow (test with a toothpick!).

While the cake is still in the oven, prepare the buttercream:

Melt the butter in a large pot over low heat.


Turn off the heat, but leave the pot on the warm plate.

Add the powdered sugar and ground vanilla and mix thoroughly.


Stir in the egg yolk until you have a nice, uniform cream.


When the cake comes out of the oven, spread the cream directly on the cake.

Sprinkle with the coconut flakes and let everything cool down.


You can cut the cake into pieces and serve it when it is still a little warm.
