Einfaldar piparkökur

Plain gingerbread


250 g sugar
200 g syrup 
2 tsp cinnamon 
1 tsp ginger
1 tsp cloves 
1/2 tsp pepper 
2 tsp baking soda
250 g butter
3 eggs
800 g flour

Icing sugar

1 Tbsp lemon juice
1 Tbsp hot water  


Slowly heat sugar and syrup in a large saucepan. Add the spices and mix well.

Add the baking soda to the warm mixture and mix quickly until it starts to bubble.

Put butter in a mixing bowl and pour the warm mixture from the saucepan over it. Stir until the butter
is melted completely.

Add eggs. 

Finally, add the flour and mix until the dough is smooth and supple. 

Cover the bowl with cling film and place it in the refrigerator over night. 

The next day, preheat the oven to 200 ° C.

Place the dough on slightly floured baking paper and roll out with a rolling pin as thin as possible. 

Cut out the gingerbread with cookie cutters. 

Place the gingerbread on a lined baking tray and bake in preheated oven at 200 ° C for about 5 to 10 minutes (depending on size). Let cool.

Finally, mix icing sugar with lemon juice and warm water until it gels into a smooth glaze. Brush the gingerbread with this sugar glaze and let dry.
