Moss Cookies


Ingredients 

40 g Iceland moss 
350 g wholemeal flour
150 g rolled oats
4 tsp baking powder
1/4 tsp salt 
200 g margarine 
250 ml milk 
1 egg yolk


Preparation

Preheat the oven to 200 ° C. Wash the moss, but do not soak. Then cut into tiny pieces.


Mix flour, oats, baking powder and salt in a bowl. Subsequently, add  the moss, margarine and milk...



... and knead all this into a smooth dough. 

Shape the dough into rolls. If the dough rolls are too soft, put them into the fridge for half an hour. Then cut the dough rolls into thin slices and place on a lined baking tray. 

Coat the cookies with egg yolk.


Bake in preheated oven at 200 ° C on middle shelf for about 10 to 12 minutes...


...until nicely browned. 

Traditionally the moss cookies are topped with butter and a tiny pinch of salt to be eaten immediately while still warm.
